Ingredients
- 2 oz frozen raspberries, defrosted
- 1/2 to 3/4 tablespoon agave nectar
- 4 oz prosecco
- fresh raspberries, if desired
Instructions
- If the prosecco is not chilled, place it in the fridge to chill.
- Defrost the raspberries at room temperature for 2 to 3 hours or gently in the microwave, ensuring they do not get hot.
- Drain the defrosted raspberries and blend them until broken down.
- Strain the blended raspberries through a fine mesh strainer into a mixing bowl.
- Add agave nectar to the raspberry puree, tasting and adjusting the sweetness as needed.
- Chill the raspberry puree for at least 2 hours.
- When ready to serve, add 2 tablespoons of raspberry puree to a champagne glass and pour prosecco over it, allowing the bubbles to settle.
- Gently mix the puree into the prosecco and garnish with fresh raspberries if desired.
- Keep the prosecco and raspberry puree chilled between servings and enjoy the bellinis immediately.
