Ingredients
- 1/4 cup long grain white rice
- 1 1/4 cups water
- 1 cinnamon stick
- 1 1/4 oz pumpkin puree
- 1/4 cup coconut cream (shake before using)
- 1 tbsp brown sugar
- 1/8 tsp pumpkin pie spice
- 1/8 tsp vanilla extract
- 1 oz rum
Instructions
- In a blender, blend the long grain white rice and 1 cup of water until the rice is finely ground.
- Add the cinnamon stick and 1/4 cup of water to the blender. Cover and refrigerate for 24 hours.
- Remove the cinnamon stick and strain the rice through a cheesecloth into a large pitcher.
- In a medium saucepan over low heat, combine the pumpkin puree, coconut cream, brown sugar, pumpkin pie spice, and vanilla extract. Stir constantly until the ingredients melt and form a smooth texture.
- Once the pumpkin sauce is lukewarm, add it to the rice milk and stir well.
- Taste test the mixture before adding the rum. Strain through a cheesecloth if desired.
- Stir the cocktail often to keep the flavors blended and garnish with a cinnamon stick.
