Ingredients

  • 2 tablespoons softened butter
  • 2 tablespoons pumpkin puree
  • 1 tablespoon packed dark brown sugar
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon pumpkin pie spice mix
  • 1/4 cup vanilla ice cream, softened
  • 1/2 cup boiled unsweetened black tea
  • 1-2 fluid ounces spiced dark rum
  • whipped cream (optional)
  • ground nutmeg and cinnamon stick (optional garnish)

Instructions

  1. In a bowl, use a hand mixer to blend softened butter until smooth.
  2. Add pumpkin, dark brown sugar, powdered sugar, and pumpkin pie spice mix to the bowl, and continue mixing until well combined.
  3. Whisk in the softened vanilla ice cream until a smooth batter forms.
  4. Pour the mixture into a plastic container, seal, and freeze for at least 3 hours until the batter is semi-solid.
  5. When ready to serve, boil unsweetened black tea in a pot.
  6. In a warm mug, whisk 1-2 tablespoons of the pumpkin butter batter and 1-2 fluid ounces of spiced dark rum together.
  7. Pour the hot tea over the batter and rum mixture, and stir gently.
  8. Optionally, top with whipped cream and a sprinkle of ground nutmeg, and garnish with a cinnamon stick.
