Ingredients

  • 2 tablespoons softened butter
  • 2 tablespoons pumpkin puree
  • 1 tablespoon packed dark brown sugar
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon pumpkin pie spice mix
  • 1/4 cup vanilla ice cream, softened
  • 1 cup brewed unsweetened tea, hot
  • 1 1/2 ounces spiced dark rum
  • whipped cream (optional)
  • ground nutmeg and cinnamon stick for garnish (optional)

Instructions

  1. In a bowl, beat softened butter until smooth using an electric mixer or blender.
  2. Add pumpkin, dark brown sugar, powdered sugar, and pumpkin pie spice mix. Mix until well blended.
  3. Whisk in softened vanilla ice cream until fully incorporated.
  4. Pour the mixture into a plastic container, seal, and freeze for at least 3 hours to set (mixture will not fully solidify).
  5. When ready to serve, bring a cup of tea to a boil.
  6. In a warm mug, whisk 1-2 tablespoons of the pumpkin butter batter and 1 1/2 ounces of spiced dark rum.
  7. Pour the boiling tea into the mug and stir gently.
  8. Optionally, add a dollop of whipped cream, a sprinkle of ground nutmeg, and a cinnamon stick for garnish.
