Ingredients

  • 6 large eggs
  • 1 lime peel
  • 6 (14 oz) cans condensed milk
  • 2 (12 oz) tins evaporated milk
  • 3-4 dashes Angostura bitters
  • 3 cups rum (750ml bottle)
  • 1/2 tsp freshly grated nutmeg
  • 1/2 tsp freshly grated cinnamon

Instructions

  1. Crack the eggs into a large mixing bowl, one at a time, and remove the white rubbery membrane from each egg.
  2. Add the peel of a lime to the eggs, then whisk the eggs until frothy using an electric mixer on low or a handheld whisk.
  3. Slowly pour in the condensed milk while whisking vigorously. Add the evaporated milk and the entire 750ml bottle of rum.
  4. Mix in the freshly grated nutmeg thoroughly. Discard the lime peel.
  5. Strain the mixture through a fine colander.
  6. Pour the mixture into sterile glass bottles to store.
