Pomegranate Sparkler
A refreshing and elegant cocktail that combines pomegranate syrup, lemon juice, and Champagne, garnished with fresh pomegranate seeds.
Ingredients
- 2 oz pomegranate juice
- 1/2 tbsp granulated sugar
- 1 tsp freshly squeezed lemon juice
- 3 oz Champagne or Prosecco, chilled
- Fresh pomegranate seeds, for serving
Instructions
- In a small saucepan, combine the pomegranate juice and granulated sugar. Bring to a low boil over medium heat.
- Continue to cook over medium heat for about twenty minutes, until the juice is reduced by half. Set aside to cool slightly.
- Transfer the pomegranate syrup to a glass measuring cup and refrigerate until very cold.
- Pour the pomegranate syrup and lemon juice into the bottom of a Champagne flute or coupe.
- Top with Champagne or Prosecco, and garnish with a few pomegranate seeds.
- Repeat the process for each cocktail.
- Serve immediately.
