Ingredients

  • 2 oz pomegranate juice
  • 1/2 tbsp granulated sugar
  • 1 tsp freshly squeezed lemon juice
  • 3 oz Champagne or Prosecco, chilled
  • Fresh pomegranate seeds, for serving

Instructions

  1. In a small saucepan, combine the pomegranate juice and granulated sugar. Bring to a low boil over medium heat.
  2. Continue to cook over medium heat for about twenty minutes, until the juice is reduced by half. Set aside to cool slightly.
  3. Transfer the pomegranate syrup to a glass measuring cup and refrigerate until very cold.
  4. Pour the pomegranate syrup and lemon juice into the bottom of a Champagne flute or coupe.
  5. Top with Champagne or Prosecco, and garnish with a few pomegranate seeds.
  6. Repeat the process for each cocktail.
  7. Serve immediately.
