A delightful and elegant cocktail that combines pomegranate syrup, Champagne or Prosecco, and a touch of lemon juice, garnished with fresh pomegranate seeds.

Ingredients

  • 2 oz pomegranate juice
  • 1/2 tbsp granulated sugar
  • 1 tsp freshly squeezed lemon juice
  • 3 oz Champagne or Prosecco, chilled
  • fresh pomegranate seeds, for garnish

Instructions

  1. In a small saucepan, combine the pomegranate juice and granulated sugar.
  2. Bring to a low boil over medium heat, then continue to cook for about 20 minutes until the juice is reduced by half.
  3. Set the pomegranate syrup aside to cool slightly, then transfer to a glass measuring cup and refrigerate until very cold.
  4. In a Champagne flute or coupe, pour in 2 tablespoons of the pomegranate syrup and 1 teaspoon of lemon juice.
  5. Top with 3 oz of Champagne or Prosecco and garnish with a few fresh pomegranate seeds.
  6. Repeat for each cocktail and serve immediately.
