Pomegranate Sparkler
A delightful and elegant cocktail that combines pomegranate syrup, Champagne or Prosecco, and a touch of lemon juice, garnished with fresh pomegranate seeds.
Ingredients
- 2 oz pomegranate juice
- 1/2 tbsp granulated sugar
- 1 tsp freshly squeezed lemon juice
- 3 oz Champagne or Prosecco, chilled
- fresh pomegranate seeds, for garnish
Instructions
- In a small saucepan, combine the pomegranate juice and granulated sugar.
- Bring to a low boil over medium heat, then continue to cook for about 20 minutes until the juice is reduced by half.
- Set the pomegranate syrup aside to cool slightly, then transfer to a glass measuring cup and refrigerate until very cold.
- In a Champagne flute or coupe, pour in 2 tablespoons of the pomegranate syrup and 1 teaspoon of lemon juice.
- Top with 3 oz of Champagne or Prosecco and garnish with a few fresh pomegranate seeds.
- Repeat for each cocktail and serve immediately.
