Plum Dream Fizz
A delightful and refreshing cocktail that showcases the natural flavor of caramelized plums, balanced with gin and a hint of lemon, topped with club soda and a lavender sprig.
Ingredients
- 2 fresh plums, halved and pitted
- 1.50 tablespoons granulated sugar
- 2 oz gin (such as Empress 1908, The Botanist, or Hendrick's Midsummer Solstice)
- 1 large egg white
- 1 tablespoon fresh lemon juice
- Ice cubes
- 2.25 oz club soda
- 1 lavender sprig, for garnish
Instructions
- Preheat the oven to 400°F and toss the halved and pitted plums with sugar on a large rimmed baking sheet until fully coated. Spread them in a single layer and roast for about 10 minutes until the fruit is soft and juicy, stirring halfway through roasting time.
- Let the roasted plums cool for 5 minutes, then scrape them and any liquid on the baking sheet into a food processor or blender. Pulse until smooth and pour through a fine wire-mesh strainer into a medium bowl, pressing the puree using a rubber spatula.
- Refrigerate the plum puree, uncovered, until completely cool, about 20 minutes. (You should have about 2 cups of plum puree, enough for multiple cocktails.)
- To make the cocktail: Combine gin, egg white, lemon juice, and 3.5 tablespoons of plum puree in a dry cocktail shaker without ice. Shake vigorously for about 15 seconds.
- Add enough ice to fill three-fourths of the shaker, then shake until well chilled, about 10 seconds.
- Strain the mixture into a chilled highball glass filled with ice. Top with club soda, and garnish with a lavender sprig.
