Ingredients

  • 2 fresh plums, halved and pitted
  • 1.50 tablespoons granulated sugar
  • 2 oz gin (such as Empress 1908, The Botanist, or Hendrick's Midsummer Solstice)
  • 1 large egg white
  • 1 tablespoon fresh lemon juice
  • Ice cubes
  • 2.25 oz club soda
  • 1 lavender sprig, for garnish

Instructions

  1. Preheat the oven to 400°F and toss the halved and pitted plums with sugar on a large rimmed baking sheet until fully coated. Spread them in a single layer and roast for about 10 minutes until the fruit is soft and juicy, stirring halfway through roasting time.
  2. Let the roasted plums cool for 5 minutes, then scrape them and any liquid on the baking sheet into a food processor or blender. Pulse until smooth and pour through a fine wire-mesh strainer into a medium bowl, pressing the puree using a rubber spatula.
  3. Refrigerate the plum puree, uncovered, until completely cool, about 20 minutes. (You should have about 2 cups of plum puree, enough for multiple cocktails.)
  4. To make the cocktail: Combine gin, egg white, lemon juice, and 3.5 tablespoons of plum puree in a dry cocktail shaker without ice. Shake vigorously for about 15 seconds.
  5. Add enough ice to fill three-fourths of the shaker, then shake until well chilled, about 10 seconds.
  6. Strain the mixture into a chilled highball glass filled with ice. Top with club soda, and garnish with a lavender sprig.
