Ingredients

  • 2 oz coarsely chopped pineapple
  • Juice of 1 lime and 1/2 orange
  • 1 1/2 tsp finely grated ginger
  • 2 oz gin
  • To taste: ginger beer
  • To serve: lemon, lime, and orange slices and mint
  • 3 1/2 tbsp caster sugar
  • 1/2 vanilla bean, split and seeds scraped
  • 1/4 cup (firmly packed) mint

Instructions

  1. In a saucepan, stir sugar and 1/2 cup water over medium-high heat until sugar dissolves.
  2. Add vanilla bean and seeds, then bring to a boil and cook until a light syrup forms (1-2 minutes).
  3. Remove from heat, add mint, pour into a container, and refrigerate until chilled.
  4. Strain the syrup, discard the mint, and return the vanilla pod to the syrup. Refrigerate until required. This syrup keeps for up to a month.
  5. Pulse pineapple in a food processor until finely chopped, then transfer to a jug.
  6. Add lime and orange juices, grated ginger, and the vanilla-mint syrup.
  7. Mix in the gin and plenty of ice, stirring to chill.
  8. Top up with ginger beer to taste and serve garnished with citrus slices and mint.
