Ingredients
- 2 oz coarsely chopped pineapple
- Juice of 1 lime and 1/2 orange
- 1 1/2 tsp finely grated ginger
- 2 oz gin
- To taste: ginger beer
- To serve: lemon, lime, and orange slices and mint
- 3 1/2 tbsp caster sugar
- 1/2 vanilla bean, split and seeds scraped
- 1/4 cup (firmly packed) mint
Instructions
- In a saucepan, stir sugar and 1/2 cup water over medium-high heat until sugar dissolves.
- Add vanilla bean and seeds, then bring to a boil and cook until a light syrup forms (1-2 minutes).
- Remove from heat, add mint, pour into a container, and refrigerate until chilled.
- Strain the syrup, discard the mint, and return the vanilla pod to the syrup. Refrigerate until required. This syrup keeps for up to a month.
- Pulse pineapple in a food processor until finely chopped, then transfer to a jug.
- Add lime and orange juices, grated ginger, and the vanilla-mint syrup.
- Mix in the gin and plenty of ice, stirring to chill.
- Top up with ginger beer to taste and serve garnished with citrus slices and mint.
