Ingredients

  • 1 small to medium white pulp peach
  • 3 oz Prosecco wine

Instructions

  1. Wash and pat-dry the peach with a paper towel.
  2. Cut the peach in half and remove the pit.
  3. Use a blender or food processor to puree the peach.
  4. Strain the peach puree through a fine mesh sieve to get a smooth puree.
  5. Keep the peach puree in the fridge until ready to serve.
  6. When ready to serve, fill a flute glass with 1/4 of the peach puree.
  7. Carefully add well-chilled Prosecco to the glass without letting it overflow.
  8. Stir with a bar spoon to combine the peach puree with Prosecco.
  9. Top up with more Prosecco and serve.
  10. Garnish with a fresh peach slice if desired.
