Peachy Sparkling Bellini
A refreshing and elegant Peach Bellini made with fresh peach puree and chilled Prosecco.
Ingredients
- 1 small to medium white pulp peach
- 3 oz Prosecco wine
Instructions
- Wash and pat-dry the peach with a paper towel.
- Cut the peach in half and remove the pit.
- Use a blender or food processor to puree the peach.
- Strain the peach puree through a fine mesh sieve to get a smooth puree.
- Keep the peach puree in the fridge until ready to serve.
- When ready to serve, fill a flute glass with 1/4 of the peach puree.
- Carefully add well-chilled Prosecco to the glass without letting it overflow.
- Stir with a bar spoon to combine the peach puree with Prosecco.
- Top up with more Prosecco and serve.
- Garnish with a fresh peach slice if desired.
