Ingredients

  • 1 medium peach (halved) or 3 thawed peach slices
  • 1 teaspoon honey
  • 1/2 cup peach nectar, chilled
  • 1/2 cup Prosecco, chilled

Instructions

  1. Preheat the oven to 375°F.
  2. Place the peach halves, cut sides up, or thawed peach slices on a lined baking sheet.
  3. Drizzle the peaches with honey, then fold the foil over and seal it.
  4. Bake for 25-30 minutes or until the peaches are tender, then allow them to cool completely before removing and discarding the peels.
  5. Process the peaches in a food processor until smooth, then transfer the peach puree to a pitcher.
  6. Add the peach nectar and half of the Prosecco to the pitcher, stirring until combined.
  7. Pour the mixture into a champagne flute or wine glass, then top with the remaining Prosecco.
  8. Serve immediately.
