Ingredients

  • 1 1/2 ounces makrut lime leaf, lemongrass, and shiso syrup
  • 1 ounce lime juice
  • 1 ounce kefir whey
  • 3/4 ounce Seedlip Spice 94
  • 1 egg white
  • Soda water, to top
  • Garnish: star anise pod

Instructions

  1. Combine makrut lime leaf, lemongrass, and shiso syrup, lime juice, kefir whey, Seedlip Spice 94, and egg white in a mixing tin and shake thoroughly without ice.
  2. Add ice to the tin and shake again.
  3. Fine strain the mixture into a fizz glass.
  4. Top the drink with soda water.
  5. Garnish with a star anise pod.
