Ingredients

  • 8-10 fresh mint leaves
  • 2 tablespoons granulated sugar
  • 1/4 cup water
  • 1/3 cup pureed seedless watermelon
  • 1 tablespoon simple syrup
  • 2 teaspoons pureed ripe watermelon
  • 1/4 cup cold seltzer water
  • ice cubes

Instructions

  1. Place half of the fresh mint leaves in a medium heat-resistant bowl and set aside.
  2. In a medium pot, combine the sugar, water, and the remaining half of the fresh mint leaves. Simmer over medium heat until the sugar dissolves and the liquid becomes a light syrupy consistency.
  3. Pour the syrup over the bowl of mint and allow it to cool, then strain.
  4. In an 8-ounce glass, mix the simple syrup and pureed watermelon.
  5. Pour in the cold seltzer water and add the pureed ripe watermelon.
  6. Top with ice and enjoy!
