Ingredients
- 8-10 fresh mint leaves
- 2 tablespoons granulated sugar
- 1/4 cup water
- 1/3 cup pureed seedless watermelon
- 1 tablespoon simple syrup
- 2 teaspoons pureed ripe watermelon
- 1/4 cup cold seltzer water
- ice cubes
Instructions
- Place half of the fresh mint leaves in a medium heat-resistant bowl and set aside.
- In a medium pot, combine the sugar, water, and the remaining half of the fresh mint leaves. Simmer over medium heat until the sugar dissolves and the liquid becomes a light syrupy consistency.
- Pour the syrup over the bowl of mint and allow it to cool, then strain.
- In an 8-ounce glass, mix the simple syrup and pureed watermelon.
- Pour in the cold seltzer water and add the pureed ripe watermelon.
- Top with ice and enjoy!
