Ingredients

  • 2 tbsp water
  • 2 tbsp sugar
  • 2 tbsp grated, peeled, and seeded English cucumber
  • 1 1/3 cup honeydew melon, chopped
  • 10-12 fresh mint leaves
  • 2 oz white rum
  • 1 oz fresh lime juice
  • 1/3 cup club soda
  • Ice

Instructions

  1. In a saucepan over medium-high heat, combine water, sugar, and ¼ cup grated cucumber to make the simple syrup. Stir until the sugar dissolves.
  2. Remove the saucepan from heat and stir the remaining ¼ cup grated cucumber into the syrup. Allow it to cool to room temperature, then strain and discard the solids.
  3. Blend the honeydew melon in a blender and strain the juice through a fine-mesh sieve. Reserve the juice and discard the solids.
  4. In a pitcher, muddle the fresh mint with the cucumber simple syrup until fragrant. Stir in the melon juice, rum, and lime juice, then chill the mixture.
  5. Just before serving, stir in the club soda and serve the cocktail over ice.
