Ingredients
- 2 tbsp water
- 2 tbsp sugar
- 2 tbsp grated, peeled, and seeded English cucumber
- 1 1/3 cup honeydew melon, chopped
- 10-12 fresh mint leaves
- 2 oz white rum
- 1 oz fresh lime juice
- 1/3 cup club soda
- Ice
Instructions
- In a saucepan over medium-high heat, combine water, sugar, and ¼ cup grated cucumber to make the simple syrup. Stir until the sugar dissolves.
- Remove the saucepan from heat and stir the remaining ¼ cup grated cucumber into the syrup. Allow it to cool to room temperature, then strain and discard the solids.
- Blend the honeydew melon in a blender and strain the juice through a fine-mesh sieve. Reserve the juice and discard the solids.
- In a pitcher, muddle the fresh mint with the cucumber simple syrup until fragrant. Stir in the melon juice, rum, and lime juice, then chill the mixture.
- Just before serving, stir in the club soda and serve the cocktail over ice.
