Ingredients

  • 2 ounces demerara rum
  • 1 ounce lime juice
  • 3/4 ounce rich simple syrup (2:1)
  • Small handful of mint
  • 2-4 dashes Angostura bitters
  • Mint sprigs (for garnish)
  • Ice (crushed)

Instructions

  1. Prepare the rich simple syrup by simmering 2 cups of demerara sugar in 1 cup of water until the sugar has dissolved, then let it cool and store in the refrigerator.
  2. In a cocktail shaker, muddle mint, lime juice, and simple syrup.
  3. Add demerara rum to the shaker and shake briefly.
  4. Strain the mixture into a tall glass and press the mint at the bottom.
  5. Fill the glass with crushed ice and swizzle using a barspoon or a swizzle stick until frost forms on the glass.
  6. Add 2-4 dashes of Angostura bitters and top with additional ice.
  7. Garnish with a generous bouquet of mint and enjoy!
