Ingredients
- 1/4 cup water
- 2 tablespoons granulated sugar
- 1 tablespoon honey
- 2-3 fresh spruce sprigs, each about 3 inches long
- 1 fluid ounce piney gin
- 1 fluid ounce spruce-honey syrup
- 1 fluid ounce Prosecco
- A few drops of aromatic bitters
- Ice shards and fresh spruce sprigs for garnish
Instructions
- In a small saucepan over medium heat, combine water, sugar, and honey. Stir occasionally until the sugar and honey dissolve.
- When the syrup starts to bubble, add the spruce sprigs and simmer for 5 minutes.
- Remove from the heat, cover, and steep for 1 hour.
- Remove the spruce sprigs and strain the syrup. If not using immediately, refrigerate the syrup in a lidded container for up to 1 month.
- Fill a shaker or glass with 5-6 ice cubes. Pour in the gin and spruce-honey syrup, then stir to mix and chill.
- Strain the cocktail into a 4-ounce glass.
- Pour a float of Prosecco into the glass and add a few drops of bitters.
- Garnish with ice shards and fresh spruce sprigs.
