Ingredients

  • 1/2 cup milk
  • 1/8 teaspoon ground cinnamon, plus extra for garnish
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon pure vanilla extract
  • 1 large egg yolk
  • 2 tablespoons granulated sugar
  • 1/4 cup heavy cream
  • 1/4 cup bourbon or rum (optional)
  • Whipped cream, for serving

Instructions

  1. In a small saucepan over low heat, warm the milk, cinnamon, nutmeg, and vanilla until it just begins to boil.
  2. In a bowl, whisk the egg yolk and sugar together until the mixture is pale in color.
  3. Slowly add the hot milk mixture to the egg yolk mixture in batches, whisking constantly to temper the eggs.
  4. Transfer the mixture back to the saucepan and cook over medium heat until it thickens slightly and coats the back of a spoon without boiling.
  5. Remove from heat and stir in the heavy cream and, if using, bourbon or rum. Chill in the refrigerator until cold.
  6. When ready to serve, garnish with whipped cream and a sprinkle of cinnamon.
