Ingredients

  • 3 deseeded lychees
  • 1 lemon wedge, deseeded and thinly sliced
  • 3-4 basil leaves, roughly torn
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons simple ginger syrup
  • 2 pinches rock salt or normal salt
  • 3 tablespoons lychee puree
  • 1/4 cup or more cold water
  • Sparkling water or club soda
  • 3-4 ice cubes
  • Chiffonade basil for garnish (optional)

Instructions

  1. In a glass, muddle the lychees, lemon, basil, lemon juice, ginger syrup, and salt for about 30 seconds until the ingredients are slightly crushed.
  2. Add ice cubes to the glass.
  3. Pour in the lychee puree and add some water.
  4. Just before serving, fill the glass with sparkling water or club soda.
  5. Garnish with chiffonade basil if desired.
  6. Stir well before drinking.
