Low-Carb Whiskey Delight
A low-carb twist on traditional Irish Cream Liqueur, this creamy delight is perfect for those on low-carb, ketogenic, diabetic, or Banting diets.
Ingredients
- 1 1/2 tablespoon stevia/erythritol granulated sweetener
- 1/4 teaspoon unsweetened cocoa powder
- 1/2 teaspoon instant coffee granules
- 1 egg yolk
- 1/2 cup heavy cream
- 1/4 teaspoon pure vanilla extract
- 1 1/2 tablespoon good quality Irish whiskey
Instructions
- In a medium saucepan, whisk together the stevia/erythritol granulated sweetener and cocoa powder until well combined.
- Whisk in the instant coffee granules.
- Whisk in the egg yolk to form a paste. Slowly add 1/4 cup of cream, about a tablespoon at a time.
- Heat the mixture over low to medium-low heat, whisking frequently, until it thickens slightly (around 200°F). Do not let it boil. Remove from heat and let it cool.
- Whisk in the remaining 1/4 cup of cream, vanilla extract, and whiskey.
- Store the liqueur in a tightly sealed glass jar and refrigerate.
