Ingredients

  • 1 1/2 tablespoon stevia/erythritol granulated sweetener
  • 1/4 teaspoon unsweetened cocoa powder
  • 1/2 teaspoon instant coffee granules
  • 1 egg yolk
  • 1/2 cup heavy cream
  • 1/4 teaspoon pure vanilla extract
  • 1 1/2 tablespoon good quality Irish whiskey

Instructions

  1. In a medium saucepan, whisk together the stevia/erythritol granulated sweetener and cocoa powder until well combined.
  2. Whisk in the instant coffee granules.
  3. Whisk in the egg yolk to form a paste. Slowly add 1/4 cup of cream, about a tablespoon at a time.
  4. Heat the mixture over low to medium-low heat, whisking frequently, until it thickens slightly (around 200°F). Do not let it boil. Remove from heat and let it cool.
  5. Whisk in the remaining 1/4 cup of cream, vanilla extract, and whiskey.
  6. Store the liqueur in a tightly sealed glass jar and refrigerate.
