Limoncello Sparkling Jelly

Ingredients
- 5 gelatin leaves
- 1 1/2 cups Prosecco
- 1 tablespoon caster sugar
- 6 tablespoons limoncello
- Edible gold glitter, for sprinkling
Instructions
- Place the gelatin leaves in a bowl of cold water for 5 minutes or until softened. Squeeze the leaves and discard the water.
- In a heatproof bowl, combine the limoncello, gelatin, and sugar, and gently heat over a pan of boiling water until the gelatin and sugar are dissolved.
- Remove from heat, add the Prosecco to the bowl, and stir to combine the ingredients.
- Carefully and slowly pour the jelly mixture into serving glasses until nearly full.
- Refrigerate until the jelly is set.
- Before serving, sprinkle a touch of edible gold glitter on top for a touch of elegance.
