Lemon Essence Delight
A bright and zesty homemade limoncello liqueur that captures the essence of sunny lemons.
Ingredients
- 8 organic and unwaxed lemons
- 1 liter vodka
- 1.90 cups sugar
- 4.20 cups water
Instructions
- Using a sharp peeler or small knife, carefully peel the zest from the lemons.
- Remove any white pith from the lemon peel to avoid bitterness.
- Place the lemon peels in a large clean jar and pour the vodka over them, ensuring complete submersion. Seal the jar and let it steep in a cool, dark place for 10-14 days.
- After steeping, strain the vodka through a muslin cloth, discarding the lemon peel. The liquid should have a vibrant, bright yellow color.
- Create a sugar syrup by boiling 2.1 cups of water with the sugar until the sugar dissolves. Then, remove from heat and add the remaining water to cool the mixture.
- Once the sugar syrup has completely cooled, add it to the yellow vodka.
- Transfer the limoncello into sterilized bottles and store in the fridge. It can last up to a year, but discard if mold appears or if it tastes off.
