Ingredients
- 1 large egg yolk
- 1 tbsp golden monk fruit sweetener
- 3 tbsp heavy cream
- 1/3 cup unsweetened almond milk
- 1/8 tsp ground nutmeg
- Pinch of sea salt
- 1/2 tsp pure vanilla extract
- 1 oz rum, brandy, or bourbon (optional)
- Fresh whipped cream, for serving
- Cinnamon or nutmeg, for serving
Instructions
- In a mixing bowl, whisk together the egg yolk and sweetener until creamy.
- In a saucepan over medium heat, combine the heavy cream, almond milk, nutmeg, and salt. Bring to a gentle simmer, whisking frequently.
- Remove from heat and slowly temper the cream mixture into the egg and sugar mixture.
- Return the combined mixture to the saucepan and heat over low heat, whisking frequently, until it reaches 160°F.
- Remove from heat, stir in the vanilla extract, and add alcohol if desired.
- Strain the eggnog through a fine mesh sieve into a large jar with a lid, and chill overnight.
- Top with fresh whipped cream and cinnamon or nutmeg before serving.
