Ingredients

  • 4 tbsp butter
  • 1/2 cup heavy whipping cream
  • 1/2 cup Swerve brown sugar sweetener
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1/4 cup Swerve confectioners sweetener
  • 2 tbsp sugar-free butterscotch sauce
  • 12 oz Diet Cream Soda
  • 2 tbsp butterscotch sauce
  • 3-4 tbsp butterscotch whipped cream

Instructions

  1. Place your mug or glass in the freezer to chill. Ensure the cream soda is cold or use ice.
  2. For the butterscotch sauce, melt the butter in a small saucepan, then add Swerve brown sugar, heavy cream, and salt. Whisk together, bring to a boil, then simmer until thickened.
  3. To make the whipped topping, combine heavy cream and Swerve confectioners in a mixing bowl. Whip until thickened, then add 2 tablespoons of butterscotch sauce and continue to whip to combine.
  4. For the butterbeer drink, add the cream soda to a mug along with 2 tablespoons of butterscotch sauce, mix well, and top with 3-4 tablespoons of the whipped topping.
  5. If making an alcoholic drink, add 1 shot of rum to the cream soda and butterscotch sauce, mix, then add the topping.
