Ingredients

  • 6 large egg yolks
  • 1/2 cup sugar
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1/2 vanilla bean, split lengthwise and seeds scraped out
  • 1 oz Baileys Irish Cream
  • 1 oz Irish whiskey
  • dash of chocolate bitters
  • 2 oz Guinness stout

Instructions

  1. In a large bowl, whisk together the egg yolks and sugar until pale.
  2. In a small saucepan, bring the whole milk, heavy cream, and vanilla bean (seeds scraped out) to a simmer.
  3. Slowly whisk the hot liquid into the egg mixture, then strain it through a fine-mesh sieve into a clean bowl.
  4. Set the bowl in a larger bowl of ice water and add the Baileys Irish Cream and Irish whiskey, stirring until cool.
  5. Transfer the mixture to the refrigerator and chill for at least 3 hours.
  6. Freeze the mixture in an ice cream maker according to the manufacturer's directions.
  7. For each float, place a scoop of the homemade ice cream in a glass, add a dash of chocolate bitters, and top it with Guinness stout. If you don't have an ice cream maker, fold Baileys Irish Cream and whiskey into softened vanilla ice cream and freeze until firm.
