Ingredients

  • 2 large egg yolks
  • 2 tbsp granulated sugar
  • 1/2 cup heavy cream
  • 1 cup whole milk
  • 1/4 tsp freshly grated nutmeg
  • Pinch of salt
  • 1/8 tsp vanilla extract
  • 1/16 tsp rum extract (optional)

Instructions

  1. In a medium bowl, whisk together the egg yolks and sugar until they are light and creamy.
  2. In a saucepan, heat the cream, milk, nutmeg, and salt over medium heat until it reaches a bare simmer, stirring occasionally.
  3. Slowly add about 1/2 cup of the hot milk mixture to the egg mixture, whisking vigorously to prevent the eggs from cooking.
  4. Continue ladling in the hot milk, whisking vigorously each time until all the hot milk has been added to the eggs and the mixture is well combined.
  5. Pour the combined mixture back into the saucepan of milk on the stove, whisking quickly, and cook the mixture, stirring constantly, until it reaches 160 degrees F on a thermometer.
  6. Remove from the heat and stir in the vanilla and rum extract (if using).
  7. Pour the eggnog into a bowl and cover with plastic wrap. Refrigerate until thoroughly chilled.
