Ingredients
- 2 large egg yolks
- 2 tbsp granulated sugar
- 1/2 cup heavy cream
- 1 cup whole milk
- 1/4 tsp freshly grated nutmeg
- Pinch of salt
- 1/8 tsp vanilla extract
- 1/16 tsp rum extract (optional)
Instructions
- In a medium bowl, whisk together the egg yolks and sugar until they are light and creamy.
- In a saucepan, heat the cream, milk, nutmeg, and salt over medium heat until it reaches a bare simmer, stirring occasionally.
- Slowly add about 1/2 cup of the hot milk mixture to the egg mixture, whisking vigorously to prevent the eggs from cooking.
- Continue ladling in the hot milk, whisking vigorously each time until all the hot milk has been added to the eggs and the mixture is well combined.
- Pour the combined mixture back into the saucepan of milk on the stove, whisking quickly, and cook the mixture, stirring constantly, until it reaches 160 degrees F on a thermometer.
- Remove from the heat and stir in the vanilla and rum extract (if using).
- Pour the eggnog into a bowl and cover with plastic wrap. Refrigerate until thoroughly chilled.
