- 1 egg yolk
- 1 1/2 tablespoons sugar
- 1/3 cup whole milk
- 2 tablespoons heavy cream
- 1/4 teaspoon fresh nutmeg
- 1 egg white
- Bourbon or brandy (optional)
- Cinnamon for garnish
Instructions
- Begin by whisking the egg yolk until it turns light in color, then gradually add in the sugar while continuing to mix.
- In a medium saucepan, combine the milk, cream, and nutmeg, and heat the mixture on medium heat until it's just below boiling temperature, around 170 degrees.
- To temper the yolks, slowly drizzle in a cup of the hot liquid into the eggs while continuously mixing.
- Once the hot liquid is mixed in, slowly add the egg mixture back to the saucepan and return to medium-low heat until it reaches 160 degrees, whisking continuously.
- Optional: Add bourbon or brandy to the mixture, then refrigerate it to chill.
- In a separate bowl, whisk the egg white until it forms stiff peaks, then fold it into the yolk base.
- Serve the chilled eggnog, garnished with a sprinkle of cinnamon.
