Ingredients

  • 1 egg yolk
  • 1 1/2 tablespoons sugar
  • 1/3 cup whole milk
  • 2 tablespoons heavy cream
  • 1/4 teaspoon fresh nutmeg
  • 1 egg white
  • Bourbon or brandy (optional)
  • Cinnamon for garnish

Instructions

  1. Begin by whisking the egg yolk until it turns light in color, then gradually add in the sugar while continuing to mix.
  2. In a medium saucepan, combine the milk, cream, and nutmeg, and heat the mixture on medium heat until it's just below boiling temperature, around 170 degrees.
  3. To temper the yolks, slowly drizzle in a cup of the hot liquid into the eggs while continuously mixing.
  4. Once the hot liquid is mixed in, slowly add the egg mixture back to the saucepan and return to medium-low heat until it reaches 160 degrees, whisking continuously.
  5. Optional: Add bourbon or brandy to the mixture, then refrigerate it to chill.
  6. In a separate bowl, whisk the egg white until it forms stiff peaks, then fold it into the yolk base.
  7. Serve the chilled eggnog, garnished with a sprinkle of cinnamon.
