- 11 grams (2 1/3 teaspoons) granulated sugar, divided
- 142 grams (1/2 cup + 1 tablespoon) whole milk
- 67 grams (1/4 cup) heavy cream
- 42 grams (3 tablespoons) bourbon
- 1/8 teaspoon freshly grated nutmeg, plus more for serving
Instructions
- In a large mixing bowl, beat the egg yolk until it lightens in color, gradually adding 11 grams (2 1/3 teaspoons) of granulated sugar until completely dissolved.
