Ingredients

  • 1 large egg, separated
  • 11 grams (2 1/3 teaspoons) granulated sugar, divided
  • 142 grams (1/2 cup + 1 tablespoon) whole milk
  • 67 grams (1/4 cup) heavy cream
  • 42 grams (3 tablespoons) bourbon
  • 1/8 teaspoon freshly grated nutmeg, plus more for serving

Instructions

  1. In a large mixing bowl, beat the egg yolk until it lightens in color, gradually adding 11 grams (2 1/3 teaspoons) of granulated sugar until completely dissolved.
  2. Add the milk, heavy cream, bourbon, and freshly grated nutmeg to the bowl, stirring to combine.
  3. In a separate medium-sized mixing bowl, beat the egg white to soft peaks. Gradually add the remaining 56 grams (1/4 cup) of granulated sugar while beating until stiff peaks form.
