Ingredients
- 2 fresh pasteurized eggs
- 3 tablespoons granulated sugar, divided
- 3/4 cup whipping cream
- 1/2 cup whole milk
- 2 tablespoons bourbon
- 2 tablespoons Frangelico hazelnut liqueur
- Freshly grated nutmeg for garnishing
Instructions
- Carefully separate the egg yolks and whites into separate bowls.
- In a large bowl, whisk together the egg yolks and 3 tablespoons of sugar until the mixture becomes pale.
- Warm the cream and milk in a saucepan over medium heat until steaming, then slowly whisk about half of the cream mixture into the egg mixture.
- Cook the mixture over medium heat, stirring frequently, until it coats the back of a spoon or the first bubble pops, then strain it into a large bowl or container to cool completely.
- Once cooled, slowly whisk in the bourbon and Frangelico, then refrigerate the mixture for about 1 hour until chilled.
- In a separate bowl, beat the egg whites with the remaining 1 tablespoon of sugar until soft peaks form, then whisk the egg white mixture into the chilled egg yolk and bourbon mixture.
- Refrigerate the eggnog until ready to serve, stirring just before serving. Optionally, brûlée the tops of the glasses and sprinkle with freshly grated nutmeg for an extra touch of indulgence.
