Ingredients
- 2 fresh pasteurized eggs
- 1.50 tablespoons granulated sugar, divided
- 3/4 cup whipping cream
- 1/2 cup whole milk
- 1/4 cup bourbon
- 1/4 cup Frangelico hazelnut liqueur
- Freshly grated nutmeg for garnishing
Instructions
- Carefully separate the egg yolks and whites into separate bowls.
- In a large bowl, whisk the egg yolks with 1/2 tablespoon of sugar until pale.
- Warm the cream and milk in a large saucepan over medium heat until steaming, then slowly whisk about half of the cream mixture into the egg mixture.
- Cook the mixture over medium heat, stirring frequently, until it coats the back of a spoon or the first bubble pops (1 to 3 minutes).
- Strain the mixture into a large bowl and cool completely. Slowly whisk in the bourbon and Frangelico, then refrigerate for about 1 hour until chilled.
- Beat the egg whites with the remaining 1 tablespoon of sugar until soft peaks form, and then whisk the egg white mixture into the chilled yolk-bourbon mixture. Refrigerate until completely chilled.
- Just before serving, stir the eggnog and sprinkle with freshly grated nutmeg. Optionally, use a kitchen blowtorch to brûlée the tops of the glasses for a pleasant meringue scent and pretty color before dusting with nutmeg.
