Ingredients

  • 2 fresh pasteurized eggs
  • 1.50 tablespoons granulated sugar, divided
  • 3/4 cup whipping cream
  • 1/2 cup whole milk
  • 1/4 cup bourbon
  • 1/4 cup Frangelico hazelnut liqueur
  • Freshly grated nutmeg for garnishing

Instructions

  1. Carefully separate the egg yolks and whites into separate bowls.
  2. In a large bowl, whisk the egg yolks with 1/2 tablespoon of sugar until pale.
  3. Warm the cream and milk in a large saucepan over medium heat until steaming, then slowly whisk about half of the cream mixture into the egg mixture.
  4. Cook the mixture over medium heat, stirring frequently, until it coats the back of a spoon or the first bubble pops (1 to 3 minutes).
  5. Strain the mixture into a large bowl and cool completely. Slowly whisk in the bourbon and Frangelico, then refrigerate for about 1 hour until chilled.
  6. Beat the egg whites with the remaining 1 tablespoon of sugar until soft peaks form, and then whisk the egg white mixture into the chilled yolk-bourbon mixture. Refrigerate until completely chilled.
  7. Just before serving, stir the eggnog and sprinkle with freshly grated nutmeg. Optionally, use a kitchen blowtorch to brûlée the tops of the glasses for a pleasant meringue scent and pretty color before dusting with nutmeg.
