Ingredients
- 2 fresh pasteurized eggs
- 3 tablespoons granulated sugar, divided
- 1/2 cup heavy cream
- 1/4 cup whole milk
- 2 tablespoons bourbon
- 2 tablespoons Frangelico hazelnut liqueur
- Freshly grated nutmeg for garnishing
Instructions
- Separate the egg yolks and whites into separate bowls.
- Whisk the egg yolks with half of the sugar until pale.
- Warm the cream and milk in a saucepan over medium heat.
- Slowly whisk half of the warm cream mixture into the egg mixture, then combine it back into the saucepan.
- Cook and stir until the mixture coats the back of a spoon or the first bubble pops, then strain it into a bowl and let it cool.
- Whisk in the bourbon and Frangelico, then refrigerate until chilled.
- Beat the egg whites with the remaining sugar until soft peaks form, then fold it into the chilled yolk-bourbon mixture.
- Refrigerate until chilled, and stir before serving. Garnish with freshly grated nutmeg.
