Ingredients

  • 0.50 oz mint leaves (about a handful)
  • 0.50 cup white granulated sugar
  • 0.50 cup filtered water
  • 0.50 lb seedless watermelon, cut into wedges
  • Crushed ice
  • 1.50 fl oz bourbon

Instructions

  1. In a small saucepan, combine the mint, sugar, and water. Heat over medium-low heat until it simmers, then let it steep for 1 hour. Strain the mixture, discarding the mint leaves, and transfer to a bowl.
  2. Grill the watermelon wedges over hot charcoal for about 1 minute per side until they develop grill marks. Let them cool slightly, then chop them into cubes and puree in a food processor or blender. Strain the watermelon puree to remove pulp.
  3. Pack a cocktail glass with crushed ice and pour in the bourbon. Add a tablespoon or two of the mint simple syrup followed by the watermelon puree. Garnish with mint leaves.
