Ingredients

  • 3/8 cup water
  • 1 1/2 tsp sour tamarind pulp or paste
  • 1/2 oz fresh ginger, preferably young
  • 2 tbsp sugar
  • 3 oz club soda or 1 1/2 oz water
  • ice

Instructions

  1. Boil 3/8 cup of water and pour it over the tamarind pulp in a heat-proof bowl. Let it sit for about 1 hour until the pulp becomes soft and mushy.
  2. Strain the tamarind extract through a fine-mesh strainer and discard the seeds and other solids. Refrigerate until ready to use.
  3. Slice the ginger and combine it with sugar and 1/4 cup water in a saucepan. Bring to a boil and steep for 10 minutes. Strain the ginger syrup and discard the ginger.
  4. In a large pitcher, mix the tamarind extract and ginger syrup together.
  5. Fill a glass with ice, pour in the tamarind-ginger syrup, and top with club soda or water. Stir and enjoy!
