Ingredients
- 1/3 cup light muscovado sugar
- 1 oz fresh ginger, peeled and finely sliced
- 3 cinnamon sticks
- 1 1/2 cups whisky or vodka
- 14 oz condensed milk
- 1 1/4 cups single cream
Instructions
- In a small pan, mix the sugar and 3/4 cup of water over low heat until the sugar dissolves.
- Add the ginger and cinnamon, increase the heat and bring to a boil.
- Cover, reduce the heat and simmer gently for 10 minutes.
- Remove the pan from the heat, stir in the vodka or whiskey, then cover and set aside to infuse at room temperature for at least 6 hours, preferably overnight.
- Pour the condensed milk into a large jug, then gradually whisk in the single cream until smooth.
- Strain the infused alcohol through a fine sieve into the jug, add a large pinch of salt and whisk to combine.
- Pour the mixture into sterilized bottles, using a clean funnel if necessary, and chill well before serving.
