Ingredients

  • 1/3 cup light muscovado sugar
  • 1 oz fresh ginger, peeled and finely sliced
  • 3 cinnamon sticks
  • 1 1/2 cups whisky or vodka
  • 14 oz condensed milk
  • 1 1/4 cups single cream

Instructions

  1. In a small pan, mix the sugar and 3/4 cup of water over low heat until the sugar dissolves.
  2. Add the ginger and cinnamon, increase the heat and bring to a boil.
  3. Cover, reduce the heat and simmer gently for 10 minutes.
  4. Remove the pan from the heat, stir in the vodka or whiskey, then cover and set aside to infuse at room temperature for at least 6 hours, preferably overnight.
  5. Pour the condensed milk into a large jug, then gradually whisk in the single cream until smooth.
  6. Strain the infused alcohol through a fine sieve into the jug, add a large pinch of salt and whisk to combine.
  7. Pour the mixture into sterilized bottles, using a clean funnel if necessary, and chill well before serving.
