Ingredients

  • 1 cup pineapple juice
  • 1/2 cup Blue Curacao
  • 1/2 cup light rum
  • 1/2 cup cream of coconut
  • Peppermint Schnapps
  • 3 cups crushed ice
  • 1/3 cup sweetened coconut flakes for rimming
  • Honey for rimming

Instructions

  1. Pour honey into a shallow saucer and shredded coconut into another saucer.
  2. Dip the glass in honey and then in the coconut, allowing it to set for a few minutes.
  3. Add the pineapple juice, Blue Curacao, light rum, cream of coconut, peppermint schnapps, and crushed ice to a blender.
  4. Blend until smooth.
  5. Pour the mixture into the coconut-rimmed glasses and serve immediately.
