Ingredients

  • 8 fresh figs
  • 1/2 tsp dried lavender buds
  • 1/2 cup granulated sugar
  • Honey
  • Turbinado sugar
  • Salt
  • 5 mint leaves
  • 2 oz fig syrup
  • 1 1/2 oz lime juice
  • 1/2 oz triple sec
  • 2 oz tequila

Instructions

  1. Cut the fresh figs into quarters.
  2. In a bowl, muddle the cut figs, lavender, and granulated sugar together.
  3. Cover the bowl tightly and refrigerate the mixture for at least three hours, preferably overnight.
  4. Strain the mixture through a fine mesh strainer, pressing down to extract all the liquid.
  5. Dip the rim of a cocktail glass into honey, then into a mixture of turbinado sugar and salt.
  6. In a cocktail shaker, muddle the mint leaves with fig syrup, lime juice, triple sec, and tequila.
  7. Add a few ice cubes to the shaker and shake vigorously.
  8. Fill the cocktail glass with ice and strain the drink into the glass.
