Fiery Fiesta Punch is a high-proof, Spanish-inspired punch bursting with the flavors of red wine, cognac, rum, and zesty juices.
Ingredients
- 1/4 whole nutmeg pod
- 1/2 teaspoon allspice berries
- 1/2 stick of cinnamon, broken into pieces
- 1/3 cup fresh orange juice
- 1/3 cup pineapple juice
- 6 oz Spanish red wine
- 1 oz cognac, VSOP
- 1 oz dark rum
- 1-2 tablespoons simple syrup (1:1, sugar:water)

Instructions
- Place the nutmeg pods in a cloth napkin and break them into pieces using a hammer or other blunt object.
- In a large stainless steel saucepan over medium heat, combine the nutmeg, allspice, and cinnamon, toasting the spices until aromatic, about 5 minutes.
- Add orange and pineapple juice, then bring the mixture to a boil.
- Reduce the heat to low and simmer until the mixture is reduced by one-third, approximately 30 minutes.
- Remove the pot from the heat and strain the liquid through a fine-mesh strainer or chinois into a large container.
- Discard the spices, then stir in the wine, cognac, and rum.
- Gradually add the simple syrup until the tannins are balanced.
- Add the orange slices, cover the container, and place it in the refrigerator to chill.
- To serve, transfer the mixture to a large glass punch bowl with a ladle, and serve into individual glasses with ice.
