Ingredients

  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 2 cinnamon sticks
  • 1/2 vanilla bean, split in half lengthwise
  • 2 eggs, separated, at room temperature
  • 2 tablespoons white sugar
  • 1 1/2 oz rum
  • 1/2 oz brandy
  • A pinch of nutmeg to garnish

Instructions

  1. In a medium saucepot, combine the milk, cream, cinnamon, and vanilla, and gently simmer over medium heat, whisking occasionally.
  2. Beat the egg yolks in a stand mixer until doubled in size, then slowly pour in a portion of the hot milk mixture.
  3. Combine the egg mixture with the remaining milk and heat gently while whisking until it reaches 176°F, then strain and refrigerate for 2-3 hours.
  4. Heat sugar and water in a pot until it reaches 230°F, then beat the egg whites until soft peaks form and gradually add the sugar syrup, rum, and brandy.
  5. Fold the egg white mixture into the chilled eggnog, refrigerate, and whisk before serving. Garnish with nutmeg.
