Ingredients

  • 1.50 large egg yolks
  • 2 tbsp granulated sugar
  • 1/4 cup heavy whipping cream
  • 1/2 cup milk
  • 1/4 tsp ground nutmeg
  • 1/8 tsp cinnamon
  • pinch of salt
  • 1/4 tsp vanilla extract
  • ground cinnamon for topping

Instructions

  1. In a medium saucepan over medium-low heat, combine the milk, heavy cream, nutmeg, and cinnamon. Whisk frequently, heating the mixture until it is almost boiling.
  2. In a large bowl, whisk together the egg yolks and sugar until smooth. Gradually add the sugar to the egg yolk mixture, whisking thoroughly after each addition.
  3. Using a ladle, add about 1/2 cup of the hot cream mixture to the egg yolk mixture, whisking thoroughly. Continue adding the hot cream, whisking between each addition, until most of the hot mixture has been combined with the egg mixture.
  4. Pour the mixture back into the saucepan and cook on medium heat, whisking constantly, until the mixture reaches 160 degrees F.
  5. Remove from the heat and whisk in the vanilla. The mixture will thicken slightly as it cools.
  6. Pour the Eggnog into a glass and lightly dust the top with ground cinnamon.
