Ingredients
- 2 large egg yolks
- 2 tablespoons sugar
- 1/2 cup heavy cream
- 1 cup milk
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cinnamon
- Pinch of salt
- 1/2 teaspoon vanilla extract
- Ground cinnamon for topping
- Optional: alcohol (such as rum or bourbon)
Instructions
- In a medium saucepan over medium-low heat, combine milk, heavy cream, nutmeg, and cinnamon. Heat the mixture until it's almost boiling, whisking frequently.
- In a large bowl, whisk together egg yolks and sugar. Gradually add sugar to the egg mixture, whisking thoroughly after each addition.
- Add about 1/2 cup of the hot cream mixture into the egg yolk mixture, whisking thoroughly. Continue adding the hot cream gradually while whisking.
- Pour the combined mixture back into the saucepan and cook over medium heat until it reaches 160 degrees F, whisking constantly.
- Remove from the heat, whisk in the vanilla, and allow the mixture to slightly thicken as it cools.
- Pour the eggnog into glasses and lightly dust the top with ground cinnamon.
