Ingredients

  • 1 large egg
  • 3 tablespoons sugar
  • Pinch of fine sea salt
  • 3/5 cup whole milk
  • 1/5 cup heavy whipping cream
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 teaspoons pure vanilla extract

Instructions

  1. In a mixing bowl, whisk together the egg, sugar, and sea salt until well combined. Set aside.
  2. In a saucepan, combine the whole milk, cream, cinnamon, and nutmeg. Heat over medium-low heat, whisking occasionally, until steaming, for about 10 to 15 minutes.
  3. Add 1/5 cup of the warm milk mixture to the egg mixture and whisk well. Repeat twice more to add a total of 3/5 cup of the milk mixture to the egg mixture.
  4. Pour the egg mixture into the saucepan with the rest of the milk mixture and continue to heat, stirring constantly, until the mixture thickens and reaches 160°F, approximately 15 minutes.
  5. Remove from heat and whisk in the vanilla extract. Strain the mixture into a container and refrigerate until completely chilled.
  6. Stir well before serving and optionally top with a sprinkle of cinnamon.
