Ingredients
- 1 large egg
- 3 tablespoons sugar
- Pinch of fine sea salt
- 3/5 cup whole milk
- 1/5 cup heavy whipping cream
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 teaspoons pure vanilla extract
Instructions
- In a mixing bowl, whisk together the egg, sugar, and sea salt until well combined. Set aside.
- In a saucepan, combine the whole milk, cream, cinnamon, and nutmeg. Heat over medium-low heat, whisking occasionally, until steaming, for about 10 to 15 minutes.
- Add 1/5 cup of the warm milk mixture to the egg mixture and whisk well. Repeat twice more to add a total of 3/5 cup of the milk mixture to the egg mixture.
- Pour the egg mixture into the saucepan with the rest of the milk mixture and continue to heat, stirring constantly, until the mixture thickens and reaches 160°F, approximately 15 minutes.
- Remove from heat and whisk in the vanilla extract. Strain the mixture into a container and refrigerate until completely chilled.
- Stir well before serving and optionally top with a sprinkle of cinnamon.
