Ingredients
- 1/2 cup granulated sugar
- 1/2 cup water
- 2 rosemary springs
- 2 oz pomegranate juice
- 1 oz gin
- 1 oz rosemary simple syrup
- Pomegranate carbonated water (to top)
- Ice
- Pomegranate arils (for garnish, optional)
- Sugared rosemary springs (for garnish, optional)
Instructions
- To make the rosemary simple syrup, combine 1/2 cup water and 1/2 cup granulated sugar in a small saucepan over medium heat. Bring to a simmer, then remove from heat and add 2 sprigs of rosemary. Let it steep for 30 minutes, then drain and allow it to cool completely.
- Optionally, for sugared rosemary sprigs as a garnish, add additional sprigs to the steeping saucepan after 30 minutes, then dip the sprigs into the syrup, place on a cooling rack, and sprinkle with additional sugar. Let them dry until hardened.
- Fill a glass with ice, pour in the gin, then stir in the pomegranate juice and simple syrup.
- Top with carbonated water, and garnish with pomegranate arils and sugared rosemary sprig.
- Serve and enjoy!
