Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 2 rosemary springs
  • 2 oz pomegranate juice
  • 1 oz gin
  • 1 oz rosemary simple syrup
  • Pomegranate carbonated water (to top)
  • Ice
  • Pomegranate arils (for garnish, optional)
  • Sugared rosemary springs (for garnish, optional)

Instructions

  1. To make the rosemary simple syrup, combine 1/2 cup water and 1/2 cup granulated sugar in a small saucepan over medium heat. Bring to a simmer, then remove from heat and add 2 sprigs of rosemary. Let it steep for 30 minutes, then drain and allow it to cool completely.
  2. Optionally, for sugared rosemary sprigs as a garnish, add additional sprigs to the steeping saucepan after 30 minutes, then dip the sprigs into the syrup, place on a cooling rack, and sprinkle with additional sugar. Let them dry until hardened.
  3. Fill a glass with ice, pour in the gin, then stir in the pomegranate juice and simple syrup.
  4. Top with carbonated water, and garnish with pomegranate arils and sugared rosemary sprig.
  5. Serve and enjoy!
