Ingredients

  • 3 oz. bourbon
  • 1.50 oz. sweet vermouth
  • 2 dashes bitters
  • 1-2 tsp. pomegranate syrup (recipe below)
  • pomegranate seeds (for garnish, optional)
  • 2 cups pomegranate juice
  • 1/4 cup sugar
  • 1 Tbsp. lemon juice

Instructions

  1. In a small saucepan, combine pomegranate juice, sugar, and lemon juice.
  2. Bring the mixture to a boil, stirring to dissolve the sugar.
  3. Reduce the heat and let it simmer for an hour, stirring occasionally, until the mixture coats the back of a wooden spoon.
  4. Remove from heat and allow to cool to room temperature, during which it will continue to thicken.
  5. In a rocks glass, combine bourbon, sweet vermouth, bitters, and pomegranate syrup.
  6. Stir gently until the syrup is dissolved.
  7. Add ice and garnish with pomegranate seeds.
