Ingredients
- 3 oz. bourbon
- 1.50 oz. sweet vermouth
- 2 dashes bitters
- 1-2 tsp. pomegranate syrup (recipe below)
- pomegranate seeds (for garnish, optional)
- 2 cups pomegranate juice
- 1/4 cup sugar
- 1 Tbsp. lemon juice
Instructions
- In a small saucepan, combine pomegranate juice, sugar, and lemon juice.
- Bring the mixture to a boil, stirring to dissolve the sugar.
- Reduce the heat and let it simmer for an hour, stirring occasionally, until the mixture coats the back of a wooden spoon.
- Remove from heat and allow to cool to room temperature, during which it will continue to thicken.
- In a rocks glass, combine bourbon, sweet vermouth, bitters, and pomegranate syrup.
- Stir gently until the syrup is dissolved.
- Add ice and garnish with pomegranate seeds.
