Ingredients

  • 1.50 egg yolks
  • 2 tablespoons sugar
  • 1 cup whole milk
  • 3/4 cup heavy cream
  • 1/4 teaspoon fresh ground nutmeg
  • 1/8 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla

Instructions

  1. In a large bowl, whisk the egg yolks until they become pale in color. Add the sugar and continue whisking until the mixture is light, fluffy, and smooth.
  2. In a medium saucepan, heat the milk and cream over medium heat until it begins to steam.
  3. Slowly pour the hot milk and cream mixture into the bowl with the egg yolks, whisking continuously until frothy. Stir in the cinnamon and nutmeg.
  4. Return the mixture to the saucepan and heat over medium heat until it simmers and thickens, coating the back of a wooden spoon. Avoid boiling.
  5. Remove the mixture from the heat and stir in the vanilla.
  6. Place a strainer over a clean bowl and carefully pour the mixture through the strainer.
  7. Cover the bowl and refrigerate the mixture until it is chilled.
