Ingredients

  • 1 cup whole milk
  • 1/2 cinnamon stick
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon pure vanilla extract
  • 3 large egg yolks
  • 1/4 cup granulated sugar
  • 1/2 cup heavy cream
  • 1/4 teaspoon ground cinnamon for topping (optional)

Instructions

  1. In a medium saucepan over low heat, whisk together the milk, nutmeg, and vanilla. Add the cinnamon stick.
  2. Bring the mixture to a low boil for 3-4 minutes.
  3. In a separate bowl, whisk the egg yolks with sugar until pale in color.
  4. Gradually add a spoonful of the hot milk to the egg yolks and sugar, mixing well after each addition.
  5. Once about 1/4 cup of hot liquid has been whisked in, slowly pour in the remaining hot liquid while whisking constantly.
  6. Pour the mixture back into the saucepan and cook over medium heat until it begins to thicken enough to coat the back of a spoon.
  7. Remove from heat and stir in the heavy cream.
  8. Chill the eggnog until ready to serve.
  9. Serve with a sprinkle of cinnamon, a cinnamon stick, or whipped cream.
