Ingredients

  • 4 cups whole milk
  • 1 cup white sugar
  • 1 stick whole cinnamon (or 1 teaspoon ground)
  • 16 whole cloves (about 1/2 teaspoon whole cloves or 1/4 teaspoon ground)
  • 5 egg yolks
  • 1/2 teaspoon vanilla extract
  • 1 cup rum or aguardiente

Instructions

  1. In a large pot over medium heat, combine the milk, sugar, cinnamon, and cloves, and bring to a simmer without boiling.
  2. In a separate bowl, beat the egg yolks until smooth.
  3. Temper the egg yolks by slowly adding some of the hot milk mixture while continuously stirring the yolks, then transfer the yolks back into the pot while stirring continuously.
  4. Cook the mixture over low heat for 8-10 minutes until slightly thickened, then stir in the vanilla.
  5. Strain the mixture through a fine mesh sieve to remove any whole spices or ground spice.
  6. Allow the mixture to cool, then stir in the rum or aguardiente.
  7. Serve chilled or warm.
