Ingredients

  • 2 cups heavy cream
  • 8 oz water
  • 2/3 cup sugar
  • 1 cup 55% chocolate
  • 1 1/4 cups 72% chocolate
  • 4 vanilla beans
  • 3/4 tsp salt
  • 2 oz heavy cream
  • 1/2 oz simple syrup
  • 1/2 oz Angostura bitters
  • 5 oz salted hot chocolate base
  • 3/4 oz Fernet-Branca
  • 1/2 oz green Chartreuse

Instructions

  1. In a medium pot, combine the cream and water, then warm over low heat, stirring frequently.
  2. Pour the liquid over the remaining base ingredients, mix well, and chill completely.
  3. In a medium bowl, combine all the cream ingredients and whip to a loose consistency.
  4. Heat the hot chocolate base, mix with the Fernet-Branca and green Chartreuse.
  5. Top the cocktail with the whipped cream and serve.
