Ingredients

  • 1 elderflower head
  • Zest and juice of 1 small lemon
  • 1 cup caster sugar
  • 1/2 teaspoon white wine vinegar
  • 1 quart tepid water
  • Ice for serving

Instructions

  1. Shake the freshly picked elderflower head and inspect for any debris.
  2. In a large bowl, combine the elderflower, lemon zest, lemon juice, sugar, and white wine vinegar.
  3. Gently pour in tepid water and stir to dissolve the sugar.
  4. Cover the bowl with fine muslin and place in a cool, dark area for 24 hours to infuse.
  5. Strain the mixture through fine muslin into a jug, then transfer to a serving bottle using a funnel, leaving a 2-inch gap at the top and sealing tightly.
  6. Allow the mixture to ferment in a cool, dark place for 2 weeks, checking regularly and burping the bottle if necessary, then transfer to the fridge.
  7. Serve chilled over ice.
