Ingredients
- 1 elderflower head
- Zest and juice of 1 small lemon
- 1 cup caster sugar
- 1/2 teaspoon white wine vinegar
- 1 quart tepid water
- Ice for serving
Instructions
- Shake the freshly picked elderflower head and inspect for any debris.
- In a large bowl, combine the elderflower, lemon zest, lemon juice, sugar, and white wine vinegar.
- Gently pour in tepid water and stir to dissolve the sugar.
- Cover the bowl with fine muslin and place in a cool, dark area for 24 hours to infuse.
- Strain the mixture through fine muslin into a jug, then transfer to a serving bottle using a funnel, leaving a 2-inch gap at the top and sealing tightly.
- Allow the mixture to ferment in a cool, dark place for 2 weeks, checking regularly and burping the bottle if necessary, then transfer to the fridge.
- Serve chilled over ice.
