Ingredients

  • 15 sprigs fresh elderflower
  • 8 cups boiling water
  • 25 cups water
  • 4 1/2 cups sugar
  • 3 lemons, peel sliced off in strips
  • 0.17 oz yeast (champagne yeast recommended)

Instructions

  1. Clean the elderflower heads, ensuring they are free of debris.
  2. Dissolve the sugar in 2 liters of boiling water. Let it cool to room temperature.
  3. Pour the sugar syrup into a large, clean 10-liter container.
  4. Add the remaining water, lemon peel, juice from 1 lemon, elderflowers, and champagne yeast. Stir the mixture well.
  5. Cover the container with a muslin cloth and leave it to ferment at room temperature for 3-4 days, stirring daily.
  6. Use 4x 2-liter plastic screw-top bottles and a funnel to decant the champagne after the fermentation period.
  7. Tightly screw on the lids and allow the second fermentation to occur in the sealed bottles.
  8. Check and carefully open each lid daily to release excess gas. After a couple of days, the second fermentation should be complete.
  9. Store the bottles in a cool, dry place or the fridge to stop the fermentation.
  10. Enjoy the refreshing sparkling drink as is or serve with tonic water, ice, and a sprig of mint.
