Ingredients

  • 1/8 large cucumber
  • Ice cubes
  • 2 tbsp elderflower cordial
  • 3 oz prosecco
  • 1.25 oz tonic water or sparkling water
  • Small handful of fresh mint leaves
  • 1/4 lime, cut into wedges

Instructions

  1. Slice the cucumber lengthways and remove the seeds.
  2. Peel the cucumber into thin ribbons using a peeler or slice thinly with a knife.
  3. Fill a tall glass with ice.
  4. Add the elderflower cordial, prosecco, and tonic water to the glass.
  5. Place the cucumber ribbons and mint leaves in the glass.
  6. Squeeze the lime wedges over the drink and drop them into the glass.
  7. Gently swirl to mix the ingredients.
  8. Serve with spiced nuts or crisps.
