Ingredients
- 1/4 vanilla bean
- 2 1/2 egg yolks (from pasteurized eggs recommended)
- 6 tablespoons superfine sugar
- 1/4 cup heavy whipping cream
- 3 tablespoons sweetened condensed milk
- 1/4 cup light rum
Instructions
- Split the vanilla bean and scrape out the seeds.
- In a stand mixer, whisk together the egg yolks, vanilla seeds, and sugar until creamy and pale.
- Slowly pour in the cream and condensed milk, and continue whisking until smooth and well combined.
- Gradually add the rum while whisking to incorporate it into the mixture.
- Transfer the egg liqueur into decorative bottles or containers and refrigerate it for up to 3 weeks.
