Ingredients

  • 1/4 vanilla bean
  • 2 1/2 egg yolks (from pasteurized eggs recommended)
  • 6 tablespoons superfine sugar
  • 1/4 cup heavy whipping cream
  • 3 tablespoons sweetened condensed milk
  • 1/4 cup light rum

Instructions

  1. Split the vanilla bean and scrape out the seeds.
  2. In a stand mixer, whisk together the egg yolks, vanilla seeds, and sugar until creamy and pale.
  3. Slowly pour in the cream and condensed milk, and continue whisking until smooth and well combined.
  4. Gradually add the rum while whisking to incorporate it into the mixture.
  5. Transfer the egg liqueur into decorative bottles or containers and refrigerate it for up to 3 weeks.
